#5 d' Elissious Cake Studio - Basalt, CO

We're Interviewing: Elissa, The Owner

About the Business!

At the age of four, my love of baking began by helping my Mom with my Grandma's pie recipes. A year later I received Who's That Short Chef cookbook.

I made my first recipe modification on the Snickerdoodle recipe from that book..."this needs more butter!" Since then I have constantly been tweaking recipes to get the best possible result.

I grew up loving all sweets, but my least favorite was cake. Cake tended to lack in flavor and the frosting was sickly sweet. After college, I worked at Spruce Confections in Boulder. They make butter cakes with French-style buttercream. After one bite, I thought, where has this kind of cake been my whole life! Our cakes at d’Elissious are known for being less sweet than your typical American cake. My cake philosophy is that cake should be complex in flavor not just super sweet.

d’Elissious is a custom cake studio nestled just outside of Aspen in the Roaring Fork Valley of Colorado. Before I took the leap to start d'Elissious in the summer of 2009, I was the Pastry Chef at The Little Nell in Aspen.

What are your most favorite cake and icing flavors?

Our most popular flavor is our signature Golden Velvet cake. It’s a vanilla sour cream [the secret to moist cakes] cake brushed with vanilla bean simple syrup and paired with fluffy cream cheese frosting. Think Red Velvet without the insane amounts of red food coloring. Another popular flavor is the Chocolate & Praline cake. It’s a super moist & chocolatey cake made with Valrhona cocoa powder paired with crunchy praline buttercream [caramelized sugar + roasted almonds] and a salted caramel swirl.

How big of cakes can you create?

We made cakes that serve 6 to 600…or really more, but that had a good ring to it.

Do you deliver?

Yes, we deliver throughout the Roaring Fork Valley [Aspen to Glenwood Springs].

Do you offer anything besides wedding cakes?

We make cakes & cupcakes for any occasion, i.e. birthdays, anniversaries, weddings, dinner parties, graduations, etc. We’re known for our 3D shaped cakes that look like things other than cake. Think a life size replica of your dog, a Chipotle burrito, a Chinese dragon, a Texas BBQ platter, and a miniature replica of Fenway Park as a few examples.

What can you tell me about getting started?

Potential clients can get started by looking at my website. I have lots of great information on there about tastings, flavor options, general pricing, and a couple of cake galleries. You can also link to my Instagram and Facebook pages from the website as well as reach out via email or phone to ask specific questions.

#6 Cake Works Bakery - Northeast Colorado

We're Interviewing: Alisa - Owner/Designer

About the Business!

Cake Works was established in 2010. I am a self taught baker with an extensive background in fine arts. I specialize in custom wedding cakes and event cakes.

My goal is to create beautiful and edible works of art that taste as good as they look.

What are your most favorite cake and icing flavors?

My favorite cake flavor is Italian cream cake with cream cheese filling and vanilla buttercream - I personally love the pecans and coconut in the cake combined with creaminess of the filling. The most popular cake choice among clients, by far, is white almond cake with raspberry filling and vanilla buttercream. It screams “wedding cake” but people love it for all occasions.

How big of cakes can you create?

The smallest size I make is 12 servings. As far as biggest, I don’t really have a maximum number of serving or sizes as long as I can fit the cake in my cooler.

Do you deliver?

Yes, I deliver (minimum order amounts need to be met). I deliver to front range Colorado areas, Denver and Cheyenne Wyoming. Delivery charges vary based on location.

Do you offer anything besides wedding cakes?

I also offer cupcakes, custom cookies, cakes pops, and brownie towers.

What can you tell me about getting started?

I start with an initial phone consultation and/or email to discuss event details and general design ideas. I have numerous inspiration photos on my website and Facebook page for clients to view. If they find a design on other media they would like recreated or customized to match their personal taste, they are welcome to share those photos with me as well. Clients are emailed price package options based on their event size and design ideas. Clients can then schedule to pick up a tasting sample box at my Johnstown location or an in person tasting if they would like to discuss more in depth customizations to their design. Tasting appointments are offered Monday through Thursday. Since many clients work during the week, design customizations can be done by email as well. I am happy to provide clients with sketches so they can visualize the final look of their cake.

#8 Iced & Dazzle- Colorado Springs, CO

We're Interviewing: Linda - Sole Proprietor

About the Business!

Iced and Dazzle is a boutique, home based wedding and special occasion bakery located in Colorado Springs, CO. It grew out of my love for baking and crafting and the desire to make my daughter’s wedding cake.

I started as a hobby, making cakes for friends and family and entered cake decorating competitions. Once the Cottage Food Law passed in Colorado in 2012, it meant that I could take my hobby to the next level. The next level for me, at the time, was to sell just a few really special cakes a year. Iced and Dazzle has grown to much more than just a few cakes a year, but I keep true to my original vision of limited cakes, focusing 100% on every last detail of every cake. When someone chooses me for their special cake, they get me, from measuring the first cup of flour, to the final placement of the final detail at the venue. No assistants, no interns, no staff, just me.

What are your most favorite cake and icing flavors?

It’s so hard to choose a favorite, because it varies from season to season! Right now, I’d say Wedding White Cake with Hibiscus Buttercream because it’s so bright and fresh; it tastes like Spring! As for my clients, they like Deep Dark Chocolate Cake, Lemon Cake, Classic Vanilla, and Wedding White. They tend to be more creative with cupcakes than with cakes.

How big of cakes can you create?

This past year due to the effect of COVID-19 on the event industry, I’ve done a lot of small elopement cakes; they’re very charming and I really enjoy doing them. I’ve also done cakes for up to 200 guests!

Do you deliver?

I do deliver, and strongly encourage it, especially for tiered cakes! I provide service to Colorado Springs, and the surrounding areas, including Monument, Black Forest, Larkspur, Manitou Springs, Woodland Park, Florissant, Fountain, Pueblo, and more.

Do you offer anything besides wedding cakes?

I do! In addition to cakes for special occasions, I offer cupcakes and dessert tables that feature a variety of small dessert items such as tartlets, cream puffs, macarons, dessert cookies, brownies and more. I also offer cake stand rentals and candy bars.

What can you tell me about getting started?

We start by gathering the event details…date, number of guests, style, event type. The client can send me inspiration pictures or a mood/Pinterest board. All of that allows me to prepare some design ideas, size options, and pricing for our consultation, which can include a tasting for a small fee.
