If you're a bride in Wyoming, you may be wondering who will do the wedding cake! Luckily, we found a local pastry chef we think you will love, and his wedding cakes are awesome! In this post, we're featuring Absaroka Cake Company, a veteran owned and operated bakery based in Jackson, Wyoming.
We had the pleasure of interviewing the owner and sole proprietor of Absaroka Cake Company, John Clover! We are so excited to share more about his bakery business!

John, can you tell us a bit about yourself?
My name is John Clover and I have been working as a professional chef for 30 years in high-end, fine dining restaurants and hotels, most of which were four-star and four-diamond rated. I have 3 beautiful and talented daughters and I love to cook, camp, and hang out with our dog, Sampson. I opened Absaroka Cake Company in 2017 when I saw a need for specialty cakes here in the greater Yellowstone area. I have worked with individuals around the country to deliver dream wedding, birthday, and celebratory cakes ever since! I love what I do and would love the opportunity to work with you to create your perfect cake.

Do you have a favorite flavor? Is there a favorite flavor among clients?
My favorite flavor wedding cake is a traditional white, almond flavored cake with a raspberry jam filling and vanilla buttercream. It is a timeless flavor combination. Although a flavor trend in wedding cakes that I have several requests for has been funfetti cake.
How big (or small) of cakes can you create?
We can prepare any size cake for any size event. We do multiple tiered cakes for 200 guests and we do small single tier cakes for elopements.
Do you deliver? If so, where to?
We delivery in the Jackson Hole area, which includes Victor and Driggs. We also deliver within a 50-mile radius of Jackson on the Wyoming side of the hill.
Do you offer anything besides wedding cakes?
ACC can prepare any dessert for any occasion. We do birthday cakes, cheesecakes, pies, tarts, doughnuts, cupcakes, cookies, and cannoli’s. We also do a lot of gluten free, vegan and sugar free cakes and desserts. You name it, we can bake it.

What can you tell us about getting started?
To get the cake process started, we usually ask for an email to make first contact. In that we like to have some of the cake flavor and design details. From there we can arrange to have a cake tasting. Typically, we offer samples of four cake flavors and icing combinations. These tastings give us a great opportunity to get all the details put together so that we can email out an accurate estimate. If a couple is not available for a tasting prior to the wedding, we can do phone or zoom consultations and email pictures that the couple may find online of cakes that they like.
