Hello everyone! My name is Brittany Wahhab and I am the Co-Founder and Director of Marketing and Events for Brim Cafe and Catering.

I am the primary contact for wedding couples from the moment they submit their inquiry to finalizing the details for their special day. I love working with couples and their families to make their first meal as newlyweds special and memorable.

Brim Cafe and Catering was established in 2014 as a corporate cafe inside the lower level of the Honey Creek Corporate Center. Michael Wahhab purchased the business with high hopes and dreams of what he would transform it into by incorporating his passion for cooking, gathering people around good food, and interacting with regular customers and the community on a daily basis. As a young couple starting out, we wanted to work our way up slowly in corporate catering, special events, and weddings, and were cognizant of not growing too fast and jeopardizing the quality of our food and service.

I spent the first four years working a full-time job as a destination wedding planner for Funjet Vacations on top of my job responsibilities at Brim. This experience made me fall in love with the world of weddings, and I had the opportunity to learn wedding planning techniques and design from world-renowned leaders in the industry at international conferences in Mexico and the Caribbean (including Colin Cowie).

In 2018, Brim was expanding so rapidly it was impossible to continue to work an additional full-time job and we made the decision that I would become full-time for our own business in the spring of 2019. I am so grateful that we have trusted our instincts and taken risks along the way to make Brim what it is today, and it is especially fun to work alongside my partner in crime. Mike is a truly talented cook, and it is a joy to see him live out his dream every day!

What catering services do you offer?

We offer plated, buffet, family style, and stations wedding catering services. The venue and kitchen set-up will determine which type of wedding catering services we offer and recommend for your unique needs, as well as the number of guests you anticipate for your event. When you decide you would like to move forward in working with Brim, and before you submit your initial deposit to confirm our services, we typically set up a venue site visit to ensure we advise of any additional costs your venue may require for our services if we have not worked with your venue before, or if it is a private venue (i.e., AirBnB).

What areas do you cater to?

We work with all venues throughout the Wisconsin area, and typically go within a 45–60-minute distance from our main cafe location in Milwaukee. Brim is a preferred caterer at Terrace 167 in Richfield and The Milwaukee War Memorial Center in downtown Milwaukee along Lake Michigan.

What types of foods do you offer? What is your most popular dish?

Brim specializes in Mediterranean cuisine; Syrian, Jordanian, and Italian variations of popular dishes. Our most popular dish throughout the years has been Chicken Ala Keef, which means the dish is made the way the chef likes it in Arabic (Chef Mike’s native language). Chicken Ala Keef is made with grilled all-natural chicken breast stuffed with Imported prosciutto and goat cheese and topped with Mike’s specialty lemon and caper sauce. Delicious!

What is the first step to potentially work with you?

The first step is to contact Brittany at to check our availability for your wedding date. We also offer private tastings for two for $50 at our main cafe location, served personally by Mike and I. This gives the couple the ability to get to know us and ask any questions they may have before reserving our services. The advantage of scheduling a tasting with us is that we place your wedding date on a complimentary hold for up to one week after your tasting to give you time to decide if we are the best fit for you. I create a proposal based on your specific needs for your review prior to the tasting.

In the initial inquiry, we will need to know:

  • Which venue will you be hosting your event?

  • How many guests do you anticipate (adults/children)?

  • What type of catering services are you interested in?

  • Will you need additional services (i.e., late night snack, coffee and/or tea bar, dessert, upgraded place settings and table décor, tablecloths for guest and head tables)?

Those who know me know I grew up in a home where my parents took every opportunity to celebrate my sister and me - a home full of love and laughter. We offer a variety of food genres. Our chefs have a diverse background and bring around the world flavors to Wisconsin. We are best known for creating customized meals for each event. Since the inception almost 10 years ago, we have I think only repeated a menu once.

International Catering Collective houses 4 separate catering companies as well as 2 restaurants. I have been running our catering business since 2019 when I took over the role from our owner. I specialize in creating custom menus, and working one on one with clients to create a meal their guests will remember for years to come. I believe food brings people together in an intimate way, and that your wedding meal is one of the most important aspects of your celebration. In addition to working with my clients, I also oversee a team of incredibly talented employees that are passionate about their jobs, and truly bring energy and professionalism to every event we do.

With four companies we are able to offer service in every style and budget, from food carts to high end full service. Whatever your design, buffet, plated, family style, or stations, we have the experience and knowledge to make it a reality.

What areas do you cater to?

We mainly serve and advertise to the greater Madison, Wisconsin area, but do travel up to an hour and a half away for full service catering, and up to 2 hours for food trucks.

Our food trucks offer gourmet grilled cheese, tacos and bowls, BBQ and our famous smashburgers. Gaylord catering specializes in traditional meals and International Catering works with cuisine from around the world. Since International Catering is a custom company, we utilize our chef teams strengths to be able to do every type of ethnic foods you can imagine.
