#1 Maine Cakes by Design - Brunswick, ME

We're Interviewing: Chanel, The Owner

Wedding Cookies

About the Business!

I am a 26 year old entrepreneur with a passion and a dream. I started my journey at Johnson & Wales University where I graduated with a degree in Baking & Pastry Arts. With the goal in mind of starting my own business, I transferred back home (to Maine) and attended the University of Southern Maine where I earned a bachelor’s degree in Business Administration with a major in Small Business Entrepreneurship. After graduation, I spent a couple of years working alongside an amazing chef, Mark Soliday and his wife, Marie of Confectionery Designs in Rehobeth Massachusetts. When I felt I was ready to branch out on my own, I decided to move back to Maine. One and a half years later, here I am living my busiest and best life doing what I love – being creative and making events extra special with sweets!

Do you have a favorite flavor? Is there a favorite among clients?

My favorite cake flavor(s) would be either chocolate cake with peanut butter frosting or strawberry cake with cream cheese frosting. But I’d have to say cheesecake is my absolute favorite dessert! As for my customers, many of them go for the traditional chocolate and vanilla combos, but marble cake, mocha buttercream and raspberry buttercream would have to be the flavors I recreate the most out of them all.

How big (or small) of cakes can you create?

I make cakes as small as 4” in diameter and as large as 12” in diameter. The largest stacked cake I have created was a 7 tier wedding cake.

Do you deliver?

I offer delivery service within 1 – 1 ½ hours from my location here in Brunswick for weddings, dessert stations, and other large events.

Do you offer anything besides wedding cakes?

Yes. I can make pretty much anything from French macarons, to donuts, to pies… cheesecakes, profiteroles, etc. When I started my business last year (January 2020), I was hoping to find a niche in the wedding industry and predicted my business would primarily consist of wedding cakes and dessert stations, but when the pandemic hit, all of the weddings were either cancelling or rescheduling for this year (2021). So during that time, I started doing a lot more custom orders for birthdays, anniversaries, and just really taking advantage of the holiday season with presales for things like DIY cookie decorating kits and various other desserts for holiday gatherings. Since then, my business has really taken off, and I’d definitely say a majority of my business still consists of custom designed cakes, hand-decorated sugar cookies and themed cupcakes. However, in the last couple of months, I’ve been booking more and more weddings, so I’m excited to expand my wedding portfolio as well!

What can you tell us about getting started with you?

Usually when my clients reach out to me, they have a clear idea in mind of what they’re looking for. Some people will send me photos for inspiration and some people have full trust in me to do anything with the theme of their celebration. But to start, it’s always helpful for me to hear what they have in mind.. if there’s any particular photos they’ve been looking at.. what their color theme is… how many guests will be attending their gathering… what flavors they might like to have… and from there we can kind of dive into the sizing/quantity and tasting options. I currently offer tasting boxes to go which consist of up to 4 cake flavors, and up to 6 filling flavors of their choice which is fun because it allows people to enjoy and indulge in the comfort of their own setting. Not everyone requests a tasting box, but it’s definitely helpful for those who don’t have any set flavors in mind for their cake, or who just want to try my product before they decide to book.

And for those clients that have no idea of what they want, I usually start with the basics – how many guests are they expecting; are they looking for cake or a dessert station; do they have any décor already picked out that we can draw inspiration from; or any linens, pieces of jewelry, dresses, flowers/greenery, etc. So, it usually takes some back and forth of bouncing ideas off of each other to solidify a design/plan for the event. I’m always happy to make suggestions to clients, but at the end of the day, I am here to make their dreams and visions come true, so I am very flexible when it comes to creating and designing cakes and dessert stations that fit the needs and wants of my clients.

#2 Reilly's Bakery - Biddeford, ME

We're Interviewing: Amy, Lead Cake and Cookie Artist

Blue and White Wedding Cake

About the Business!

Reilly’s Bakery was established in Biddeford, ME in 1910. The owner, Elizabeth (Reilly) Hussey is the fourth generation to own the shop (with her Husband Kevin) and she is the first woman in the family to run the show. The bakery uses the same from-scratch recipes passed down through the years for cakes, cookies, breads, donuts, and pastries, and we have added more items to keep up with trends and tastes.

I began working for the bakery as a part-time cake decorator back in 2011. I moved to full-time and lead artist in 2016. I have 20 years of experience as a cake artist and much of my ability is self-taught. All of the specialty cakes, decorated cookies, and wedding orders start and finish with me.

What are your most favorite cake and icing flavors?

Chocolate cake is my favorite food. It pairs well with every frosting we have and many of the fillings as well.

Is there a favorite or “most popular” among clients?

For wedding cakes, most of my couples love our Champagne flavored cake (a vanilla cake with actual champagne baked into the batter!) with strawberry preserves filling and a smooth buttercream frosting.

How big (or small) of cakes can you create?

We offer any sized cake from a single-tiered cutting cake, to cupcakes, to a 5-tiered 300 serving cake.

Do you deliver?

Yes! If yes, what are your service areas? We have gone as far as Ossipee, NH and Augusta for deliveries but are not limited to those distances with proper planning.

Do you offer anything besides wedding cakes?

Yes! For weddings specifically our most popular items are tea pastries, which are basically miniature versions of our most popular large pastries. In addition to these, we have done whoopie pies (because they are from scratch we can make them any size to fit your event needs), tiny 3” pies, donut walls/displays, and decorated cookies as favors.

What can you tell me about getting started?

The first step is to email me directly to discuss availability and to get a quote. We ask for an approximate amount of servings and a general idea of cake style to get a cake estimate. Typically I then set up a consult with the couple to discuss details and to send them off with a complimentary tasting. Once everything has been chosen and the details fine-tuned we write up a contract with all of the information and payment dates/amounts.

#3 The Sandpiper Cake Shop - York, ME

We're Interviewing: Sasha, Owner & Specialty Cake Designer

Bakery Owner with Cake

About the Business!

The Sandpiper Cake Shop is a boutique style wedding bakery located in York, Maine.

I am a very small vendor, specializing in custom order cakes, decorated cookies, macarons, cupcakes and more! As a self-taught baker and designer, I have experimented with the craft immensely and have found great success in self made recipes and designs. I love providing a very personal experience for my clients, so I work independently in order to give each order the attention and detail that it deserves.

What are your most favorite cake and icing flavors?

There are so many delicious options to choose from! I do have a sweet spot for moist black velvet cake, but I would have to say my very favorite is a spiced carrot cake with orange zest cream cheese buttercream!

Is there a favorite among clients?

My most popular flavor is a light, lemon white cake with Maine blueberry compote filling and whipped vanilla bean buttercream. Although, almond cake filled with raspberry buttercream filling and vanilla bean buttercream is a close second!

How big (or small) of cakes can you create?

My business is focused on tall, elegant custom three-tiered cakes and below! Each standard tier sits at about 6”-7” in height, but I work closely with each client to design a cake that fits their vision perfectly.

Do you deliver? If yes, what are your service areas?

Yes! I deliver within 75 miles of my shop, and include set up as well.

Do you offer anything besides wedding cakes?

Absolutely! I specialize in customized decorated cookies and offer a wide variety of other items including French macarons, cupcakes, bars, mini pies, cookies, coconut macaroons and more.

What can you tell me about getting started?

I accept all order inquiries through my website or directly via email. Once I have ensured availability, a tasting and consultation is scheduled to get the process moving forward! I ask that clients provide me with as much detail of their vision as possible, including photos of inspiration and color swatches if possible.
